Creamy Coconut Tuna Soup

This fragrant & creamy tuna soup is super simple & super delicious. Flavoured with garlic, chilli, cori&anp;er, lemongrass & curry it is served with a side of sweet potato & plantain balls which are dunked into the soup.

Ingredients

Vegetable oil
30mls
Brown onion, sliced
150g
Garlic, finely chopped

Ginger
25g
Red chilli, finely chopped
10g
Lemongrass, crushed
1 stalk
Coconut milk
400ml
Water
1 cup
Bokchoi, washed & leaves separated
200g
Cori&er leaves, washed, roughly chopped (plus extra to garnish)
5g
Mild curry powder
1 teaspoon
Tinned tuna in oil, strained

Salt
1 tsp
Tomato, cut into thin wedges

Method

  1. Saute the onion with oil in a large saucepan on high heat until the onion is soft.

  2. Add the ginger, garlic, chilli & lemongrass. Once the onion starts to become transparent, add half the coconut milk.

  3. Add water & bring to boil, then turning down the heat to medium.

  4. Add the bokchoi & cori&er & cook for a further 2 minutes

  5. Add the tuna, curry powder, tomato & salt to taste.

  6. Add the remaining coconut milk & bring back to the boil, & simmer on low until ready to serve.

  7. Garnish with extra cori&er to serve.
