Duck Bolognese with gnocchetti sardi

Adam has gifted his family’s favourite Duck Bolognese with Gnocchetti Sardi recipe for you to cook at home – “My kids eat this meal 3 times a week, it’s their favourite pasta sauce of Dad’s! I try and spoil my loved ones by making it that little bit more luxurious by using duck and cheese and better than your average Bolognese”, says D’Sylva.

Duck mince

Medium size brown onions, diced

Cloves garlic, chopped

Bunch thyme, picked and chopped

Tin, whole peeled tomatoes

Duck fat

Shredded mozzarella
100g
Packet gnocchetti sardi, cooked to al dente in salted water
250g
Parmesan cheese to serve
 

Method

  1. In a heavy based pot, seal duck mince off to become a course grainy texture.

  2. Saute onion and garlic in a medium sized pot. Add a splash of water to help with the sautéing. Do not colour onions.

  3. Add tomatoes and cook for 30 mins.

  4. Using a stick blender, puree the tomato mixture until smooth.

  5. Add duck mince, thyme and bay leaf.

  6. Cook for another 30-40 minutes

  7. Toss in a pan with pasta and finish with a spoonful of duck and handful of mozzarella.
