Sauteed Greens

This side dish turns ordinary greens into extraordinary greens. Simple sauteed greens are the perfect accompaniment to Ethiopian curry & best served with Injera Bread (Ethiopian flatbread).

Ingredients

Vegetable oil
50mls
Brown onion, peeled & finely chopped
130g
Garlic, peeled & finely chopped
25g
Ginger, peeled & finely chopped
25g
Red hot chilli
15g large
Spring onion, remove roots & finely slice
100g
Mushrooms, sliced
150g
Green capsicum, chop into 1 cm pieces
100g
Spinach, washed & roughly chopped
1kg
Salt
1 teaspoon
Pepper
½ teaspoon

Method

  1. Heat oil in a large saucepan on high heat.

  2. Cook brown onion until soft then add the garlic & ginger & cook a further 1—2 minutes.

  3. Add the chilli, spring onion, mushrooms & capsicum & cook a further 2—3 minutes. Add a little water if the pan becomes dry.

  4. Add the spinach, stir, then cover & cook on low heat until the spinach has softened.

  5. Add salt & pepper (more according to taste).

  6. Strain the excess water that naturally comes out of the spinach & mushrooms. The finished mixture should not be runny when served
