Hot Chilli Sauce

You’ve been warned – this chilli sauce is HOT. Made with green chilli, ginger, garlic & cori&er this condiment adds an extra kick of flavour & heat to any of Genet’s dishes.

Ingredients

300g
Small green hot chilli, remove green stems & roughly chop
50g
Garlic, peeled
50g
Ginger, peeled, roughly slicedd
40g
Dill, remove stems, wash, roughly chopped
15g
Cori&er, remove stems, wash, roughly chopped
15g
Basil, remove stems, wash, roughly chopped
15g
Salt
1 teaspoon
Olive oil
70ml

Method

  1. Pulse all prepared ingredients, salt & 50mls olive oil in blender, stopping to push ingredients down until it forms a paste. Add the remaining 20mls olive oil & blend until smooth.

  2. To serve, place in a bowl on the table so guests can add their preferred quantity to their meal for an extra chilli kick.

Cook’s Notes:
Put leftover sauce in sterilised glass jar, cover with a thin layer of olive oil & keep in the fridge.
