Persian Cucumber, Tomato & Onion Salad

A dish that is found on almost every Persian table at almost every meal. Bright, crunchy & a little tart, this herby & juicy salad is the perfect side salad to a golden saffron rice or a rich Persian stew.

Ingredients

Lebanese cucumber

Tomatoes

Red onions

Juice of 2 lemons

Dried mint
2 teaspoons
Olive oil
4 tablespoons
Sumac
4 teaspoons
Black pepper
2 teaspoons
Salt
4 teaspoons
Pomegranate for decoration

Method

  1. Cut the cucumber & tomato into cubes & place in a bowl

  2. Finely dice the red onion & add to cucumber & tomato mix & stir to mix through

  3. In a separate bowl combine the lemon juice, mint, olive oil, sumac, black pepper & salt.

  4. Add the dressing to the salad & stir to combine.
