Basque Vanilla Cheesecake

  • Makes: 1 x 18cm cheesecake


  • 4 eggs, lightly beaten

  • 600g cream cheese, softened

  • 200g sugar, caster

  • 165g mascarpone

  • 100g cream

  • 20g plain flour

  • 2 vanilla pods, seeds scraped

  • Salt



  1. Preheat oven to 200C (180 fan). Line a standard baking tray with baking/parchment paper.

  2. Spray an 18cm diameter baking ring or spring form ring. Cut a large circle of baking parchment and push into the lightly sprayed ring to the edges, you want the paper crinkled, not neat. Lightly spray the inside of the paper.

  3. Place the eggs into a stand mixer and mix on a medium speed for 20 seconds.

  4. Add cream cheese and mix again for 30 seconds to a minute on a medium to high speed.

  5. Scrape down the inside sides of the bowl with a scraper and again mix or 30 on a medium to high speed (or until smooth).

  6. Add the sugar and mix again 60 secs.

  7. Scrape down the sides and add the cream, mascarpone, vanilla seeds and salt. Mix for until smooth.

  8. Add the flour and mix again for a minute

  9. Fill each ring with the mix

  10. Bake in the preheated oven turned down to 190C for 45 minutes.
