Zobo Drink

Zobo is a sweet, zingy drink, made from the outer parts of the hibiscus flower. Simple to prepare, and delicious served warm or cold, Zobo can be flavoured to your taste with fruits like pineapple and citrus, as well as spices like cinnamon, cloves, star anise and ginger.

Ingredients

1 cup of dried zobo (available online or from Nigerian food stores. Can substitute with hibiscus tea)

6 cups of water

Your choice of natural sweetener (honey, sugar, agave syrup, or sugar-free sweetener)

Your choice of natural flavouring (lemon, lime, orange, ginger, or spices)
Method
Warm preparation
Add the zobo to a teapot or pitcher, along with any sweeteners or flavourings you like. If you prefer a more intense flavour, you can add more than 1 cup of zobo. Boil the water and pour over the zobo. Allow it to steep for 4 to 5 minutes, then strain the tea into cups to serve.
Cold preparation
Add the zobo to a pitcher with the water – cool or room temperature is fine – and stir. Again, if you prefer a stronger taste add more than 1 cup of zobo. Make it sweeter or zestier using your choice of ingredients. Refrigerate overnight, then strain the tea to serve. Add more water to dilute, or garnish with a slice of citrus fruit, if you desire.
